Have a Fiesta at Siesta Key
What would cap off a fun day in the sun better than a grilled meal?
Picture this: the sun is just starting to set a bit with a spectacular view on Siesta Key. So, you and the family head over to the barbecue area and fire up the grill.
By the time the meat is grilled, you’ll be sitting down at the picnic table or on the lawn chairs and enjoying this view while you sink your teeth into some wonderful grilled burgers or fish.
If you’ve done some fishing on the beach or while boating and had some luck, then you might have some snapper or grouper to grill up, two fish common to this area. Once you’ve filleted them, you’re ready for a fresh fish dinner!
Try this delicious grilled snapper recipe with a lemon vinaigrette:
- Season the filets with salt and pepper
- Then prepare the vinaigrette with one tbsp. mustard and 3 lemons zested and juiced. Add salt and pepper as desired.
- Whisk in 1/2 cup vegetable oil and 1/4 cup olive oil. Set aside.
- Grill potatoes and corn on cob just enough to get grill marks on each. When done, remove the corn from the cob and slice the potatoes. Put in them bowl with some arugula.
- Then grill fish in a cast iron skillet; light only one side of the grill and put on high. Snapper cooks quickly, so cook it on the side of the grill without a flame directly underneath. Cook until the filets are pearly white and almost totally opaque.
Put the grilled fish over the corn and potato salad and drizzle the lemon vinaigrette over it all. Then enjoy the mouth-watering meal right there on the beach!
Key Lime Butter Grilled Grouper is a quick and easy recipe if you’ve caught it and are grilling up this type of fish.
- Clean up and cut your grouper into fillets.
- Stir the zest of one Key lime and 2 tbsp. softened unsalted butter.
- Place fillets on the grill pan after you’ve brushed the key lime/butter seasoning on them and salt and peppered them to taste.
- Monitor them carefully; turn them over when needed.
- When they’re flaky, they’re ready to eat!
Of course, you can choose to enjoy these meals at lunchtime as well. A midday barbecue during your day at the beach is the perfect break from the sun and fun–eat up, take a break and then get right back to it.
